Salsa

What You’ll Need:

3 tomato, diced

1/4 of a large orange or red pepper, diced

1/6 onion, chopped

1/2 shallot, chopped

1/6 cup of chopped cilantro

1/6 clove garlic

1/4th the juice of a lime

sprinkle of cumin

sprinkle of cayenne pepper

generous generous sprinkles of salt

sprinkle of chili powder

What You’ll Do:

1. Mix tomato, pepper, onion, shallots, cilantro, and garlic. Top with lime, cumin, salt, and chili powder and mix.

4. Serve with chips, and enjoy. 🙂

Mashed Sweet Potatoes with Caramelized Onions

What You’ll Need:

1/2 onion

canola oil

1 sweet potato

sprinkle of chili powder, cumin, paprika, salt, and cayenne pepper

honey

What You’ll Do:

1. Sautee the onions with the canola oil over a medium flame, stirring very infrequently. Once they soften and begin to brown on each side, return the flame to low and allow to slowly caramelize. This process takes about 40 minutes.

2. When the onions are dark brown, add the paprika, cumin, and season with salt and cayenne to taste

3. Heat a large pot of water to boil. Peel the sweet potatoes and cut them into reasonable sized chunks and boil for 25 minutes. Then mash, and add honey to taste.

4. Add the chili powder and a dash of cayenne to the mash then spread the onions over the top of the pan.

Chickpea Bites

What You’ll Need:

1 cup of dried chickpea

12 cups of water

sprinkle of salt

What You’ll Do:

1. Soak the chickpea overnight in 4 cups of water.

2. Then rinse several times.

3. Then boil the chickpea in 8 cups of water for about 4 hours, until soft.

4. Then drain the chickpea and add salt.

5. Put in the broiler at 450 on a baking pan for about 20 minutes, and enjoy 🙂
