Tofu Curry

What You’ll Need:

1 tablespoon canola oil

2 can chickpea

2 cans chopped tomatoes

1 onion, chopped

1 block extra firm tofu, drained and cut into cubes

4 tablespoons mango chutney

1 tablespoon curry

salt

1/4 cup tahini, mixed with 1/4 cup of water and the juice of 1/4 of a lemon (optional)

What You’ll Do:

1. In a pot heat the canola oil and add the onions until fried.

2. Add the chopped tomatoes and let them cook. Add salt.

3. Add chickpea, tofu, curry, and chutney until cooked.

4. Wait for it to cook a bit then add the tahini on top, mix, and enjoy 🙂

Chickpea Bites

What You’ll Need:

1 cup of dried chickpea

12 cups of water

sprinkle of salt

What You’ll Do:

1. Soak the chickpea overnight in 4 cups of water.

2. Then rinse several times.

3. Then boil the chickpea in 8 cups of water for about 4 hours, until soft.

4. Then drain the chickpea and add salt.

5. Put in the broiler at 450 on a baking pan for about 20 minutes, and enjoy 🙂
