Anchovy Pasta

This one involves spelt, even though I wouldn’t recommend eating tons of flour.

What You’ll Need:

½ pound whole grain spelt pasta

Salt

3 tablespoons olive oil

4 garlic cloves, chopped

4 anchovy filets, rinsed and chopped

1 tablespoon capers, rinsed and chopped

½ teaspoon red pepper flakes

2 tablespoons chopped parsley

Parmesan for grating

What To Do:

  1. Cook pasta with salt.
  2. Cook garlic in olive oil for 1 minute then add in anchovies, capers, and red pepper for 1/2 minute.
  3. Put mixture on pasta and add parsley and parmesan.
  4. Serve hot and enjoy 🙂

Shishito Peppers

What You’ll Need:

8 ounces shisito peppers

salt

olive oil

What To Do:

  1. Heat pan over high heat until hot.
  2. Add peppers are stir until both sides blister.
  3. Sprinkle with a generous amount of salt.
  4. Serve hot and enjoy 🙂

Baked Portobellos with Buffalo Mozzarella

What You’ll Need:

6 large portobellos

1 large buffalo mozzarella cut into 1/2 inch slices

white vinegar

olive oil

grated parmesan

salt

pepper

parsley

basil

What To Do:

  1. Preheat oven to 425
  2. Drizzle portobellos with olive oil, vinegar, salt, and pepper then lay on baking sheet
  3. Cook for 10 minutes
  4. Remove from oven and put the mozzarella into the mushrooms drizzle with olive oil, parmesan, and herbs
  5. Cook for 5 minutes then enjoy 🙂
