Tomato, Feta, and Spinach Crepe Filling

What You’ll Need:

1/2 onion, diced

1 large can of tomatoes, drained

3 cloves garlic, diced

2 cups of cooked spinach

1/2 spoon honey

1/2 cup feta

salt

crepes

What To Do:

1. In a pot cook the onions and garlic.

2. Add the tomatoes and let them simmer for 3 minutes.

3. Add the honey, salt, and spinach and let it simmer for 2 more minutes.

4. Add the feta.

5. Simmer on low then let sit and cover for 15 minutes.

6. Place in crepes, and enjoy! 🙂

What You’ll Need:

7 oz of flaked whole grain spelt pasta

1/2 head of cabbage, chopped finely

2 onions, chopped finely

1/2 of raw, brown sugar (I never use sugar, except for this recipe.)

8 tablespoons oil

salt, generous amount

pepper

water

What You’ll Do:

1. Heat the oil then add the sugar until caramelized dark.

2. Add the onions to sauté.

3. Add the cabbage and sauté a little.

4. Add salt, pepper, and water (enough water so that it’s in-between burning and steaming).

5. Keep adding water and cover half way with the lid.

6. After thirty minutes mix with pasta, and enjoy 🙂

Tofu Tacos

What You’ll Need:

1 tablespoon canola oil

1 block of extra firm tofu, drained, dried, and cut into 1-inch thick slices

1/2 can cooked black beans (recipe here)

2 garlic cloves

1/4 onion

1 tablespoon honey

3 teaspoon cayenne pepper

3 teaspoon parsley

3 teaspoon paprika

1 teaspoon cinnamon

salt

pepper

1 cup Monterey Jack cheese

1 tomato, diced

1 cup of shredded lettuce

13 corn tortillas

What You’ll Do:

1. Mix garlic, onion, and honey in a food processor until it becomes a liquid.

2. In a bowl mix cayenne pepper, parsley, paprika, cinnamon, salt, and pepper with a little bit of canola oil.

3. Add both mixes together in the bowl.

4. Coat the tofus slices with the mixture.

5. Heat a pan with canola oil and fry the tofu until it is brown.

6. Heat the corn tortilla on medium high heat. Sprinkle the cheese and flip. Continue to heat until hot.

7. Layer the tofu, beans, tomato, and lettuce on the tortilla.

8. Serve hot, and enjoy. 🙂
